Broiled Lemon Chicken
An easy-to-prepare delicious chicken recipe

Ingredients
1/3 cup lemon juice
1/3 cup olive or vegetable oil
1/2 tsp salt
1/4 tsp pepper
1/4 cup grated Parmesan cheese
2 tbsp Dijon mustard
1 lb skinned boneless chicken breast
Preparation
In a small bowl, combine all ingredients except the chicken.
Cover and chill 1/4 cup of the marinade. Use later to baste chicken while broiling.
Place the chicken breasts in a shallow dish or resealable plastic bag and pour in marinade. Cover or seal tightly, then place meat in the refrigerator for 2-3 hours.
Remove chicken from the marinade.
Broil chicken until tender, basting with reserved marinade while cooking.
