Brunswick Stew

A hearty chicken stew.

Serves: 6-8
Prep Time: 55 minutes

Ingredients

1 chicken (3-4 lbs)
1 large onion, chopped
3 potatoes, diced
1 1/2 cup chopped okra
1 box frozen lima beans
1 can corn
2 medium-sized tomatoes, chopped
1 tbsp sugar
salt and pepper

Preparation

Place chicken in a pot and cover with water. Bring to a boil, reduce heat and simmer for 30 minutes.

Add the onion, potatoes and okra. Continue to simmer another 10 minutes.

Remove chicken from pot and allow to cool.

Pull meat from bone and add to pot, discarding bones and skin.

Add lima beans, corn, tomatoes and sugar. Simmer for an addition 10 minutes

Season with salt and pepper to taste.
